Would taking out the SIM card from an iPhone 4S deleted everything off it?

  Nope. When you have a sim card in a phone, a lot of times you have the option to save things to just the sim card, so when you save things to your "phone", (phone meaning sim card), that you can choose to put it either on your phone or your sim card, whichever one has more space or is a more reliable storage source. Only removing the sim card from your phone, however, will not delete everything from it. The only risk of that ever happening is if your iPhone gets a virus or something. Also, do NOT remove the card while you're downloading something to it. While you download file(s) to your phone, the sim card is open and vulnerable to losing things. Good luck!
