Can I substitute vegetable oil for shortening when I am making cookies?

In general no.

However coconut, palm, or palm kernel oil will usually work in recipes that call for shortening.

Butter is better than Margarine due to the lower trans fat count. Vegetable oil would not make a good cookie.

I wouldn’t recommend it because your cookies will end up greasy…a better option here would be margarine.
