Good Southern cooking?

What’s the best kind of Southern cooking you ever had? Do people down south make allot of spicy foods? I’m asking this since I’ll be visiting Alabama this Summer and I was just wondering what kind of recipes people down south make. And, what’s your favorite dish? Just curious to know what they cook down there.

We fry A LOT down here. Certain places make a lot of spicy foods, mostly Louisiana. Expect a lot of fried chicken, pork chops, BBQ, biscuits (especially biscuits and gravy), rice, grits, potato salad, greens, and stuff like that. I don’t know about Alabama specifically since I haven’t spent a lot of time there but I’m positive that its just like the rest of the South. A southerner will fry anything. Very fattening!

Also, if you’ve never had grits before and you try them, just put a little salt and some butter in them. No sugar! They’re actually pretty good.

I think my favorite dish is chicken and rice or chicken and dumplings.
