Consider pasta primavera. It is a dish of pasta and vegetables; generally different colors of bell pepper, summer squash, onions, carrots, cherry tomatoes, etc. I like pasta primavera with a light cream sauce and Parmesan but it is also made with standard marinara or a mixture of tomato and cream based sauce.
Broccoli, spinach, mushrooms, bell peppers, onions, artichokes, zucchini, olives, avocados, garlic, and carrots can all be used in spaghetti. :-)
