Who has an easy, simple cupcake recipe?

I always bake and I just want a reliable recipe for quick tasty cupcakes.

Basic Vanilla Cup Cake Recipe 12 cupcakes)

Ingredients 5 oz (150g) Butter - softened 5 oz (150g) superfine (castor) sugar 6 oz (175g) self-raising flour 3 eggs 1 tsp vanilla extract Method

  1. Pre-heat the oven to 350oF (180oC).
  2. Line a 12 cup cake pan, with cup cake papers.
  3. Crack the eggs into a cup and beat lightly with a fork.
  4. Place all the ingredients in a large bowl.
  5. Beat with an electric mixer for 2 minutes, until light and creamy.
  6. Divide the mixture evenly between the cake cases.
  7. Bake for 18-20 minutes until risen and firm to touch.
  8. Allow to cool for a few minutes and then transfer to a wire rack.
  9. Allow to cool fully before icing.

I have an easier one…:P Here is what you need…


A. Buy any cake mix from any company…(choose your fav cake mix…chocolate/vanilla/marble/lemon/strawberry or devil foods…), Any flavored frosting, A package of papers for the cupcakes to go into, of course if you dont have a tray for cupcakes you will need that as well & last but not least, baking spray(to spray the tray) B. Next you will need a spatula & a mixer.


Now to prepare…

  1. Take a large bowl open the package up & empty the package in the bowl.
  2. Add eggs water or oil according to the directions on the box (usually the back or side) then mix all together in the mixer.
  3. Preheat the oven to what they say and have your cupcake tray sprayed & the cupcake papers in the tray.
  4. Pour some of the cake mix only halfway of the cupcake paper because it will rise.(dont want to over flow it) Repeat in all!
  5. Now place the tray in the oven to the precise Temperature as stated in the directions on the box. (if you have a different oven like one that has turbo & such you may have to check on the box or in the booklet)
  6. Make sure you set a timer so you dont over cook it til its burned! Then take a toothpick to make sure its cooked on the inside. (should come out perfect every time!) :P
  7. Allow it to cool for an hour or so & now you are ready to use the spatula to smear the frosting onto each cupcake.


C. Optional Only…if you want it for kids or a festive day buy some candied ornaments and sprinkle it on gently over the frosting. :)
