Whoopie pie filling

Hi, does anyone know any ways I can make whoopie pie filling without using shortening? But at the same time I dont necessarily want a marshmallow based filling either…something light and fluffy without all the fat would be great! Thanks:o)

Light & fluffy, but not too fatty? So, I guess whipped cream is out. I’m not a fan of cool-whip because I think its made from plastic or something, but maybe that’s an option.

What about a meringue? That’s just egg-whites and sugar, maybe a little cream of tartar for stability.

Maybe… something like a cream cheese frosting, but neufchatel or low-fat cream cheese? If you cream it enough (but not too much), it can get pretty fluffy. If you make a flavored version, you can hardly tell its cheese.

I don’t blame you for omitting the shortening. I never liked it for frostings. Makes that film on the roof of your mouth. Especially animal shortening.

Happy baking!
