I usually eat salad, or a sandwich with lettuce, tomato, beetroot, and sometimes egg and cheese.. depends if I'm going vegetarian or vegan that day haha. You could have noodles with corn and peas which is really nice, but may not be good for a hot day. Sushi is good and they have vegetarian sushi.
Well I was going to say black bean soup, but i don't think that would go to nicely on a hot day. XD How about just some salad? Throw in some tomatoes and onions :D
One of my favorites is an avocado, tomato, and alfalfa sprout sandwich on wheat bread.
Make a nice pasta salad :) Pasta salad is always wonderful on a hot day :D
