You know, like films that are actually IN French or Spanish...
As above Pan's labyrinth, you could try The Orphanage and The Devils Backbone, all in Spanish, there's also a film Open Your Eyes/Abre Los Ojos which was remade in the English language as Vanilla Sky with Tom Cruise.
For French films, Amelie, La Femme Nikita. I've not seen them but the Three Colours trilogy is supposed to be very good (Three Colours Red, Blue White), and Diabolique (Les diaboliques) and Delicatessen is supposed to be very good (again I've not seen that one).
Sin Nombre is pretty good as is The Devil's Backbone. I've also recently recorded Cronos. If you want something a little light-hearted but emotional try Valentin. You should also have a look at any english DVDs you have as a lot of them will have a french or spanish language option =].
