The way I was taught, was that your first cousin, second cousin and third cousin etc. are all in the same generation as you.

This means that you have the same grandparents as your first cousin, the same great-grandparents as your second cousin and the same great-great-grandparents as your third cousin.

Once removed, means up or down one generation. Twice removed means up or down two generations.

So your dad’s first cousin is your first cousin once removed.

Your first cousin once removed would be your mother/father’s first cousin.

We make things simpler by calling them ‘second’ cousins.
