Butternut Squash Soup

1 large butternut squash ( 2.5 lbs) 5 cups of chicken stock (not broth; I prefer to make mine homemade) 1 medium sized yellow onion 2 tablespoon butter 1 large carrot (peeled) Nutmeg to taste (start with just a pinch) Salt and Pepper to taste

  1. Preheat oven to 400 degrees
  2. Cut butternut squash in half and scoop out seeds.
  3. Place 1 teaspoon butter where you removed seeds and season with salt and pepper.
  4. Place butternut squash flesh (cut side) up on baking sheet and bake for 25-30 min or until fork tender.
  5. While butternut squash is in oven chop up the onion and carrot and place in large pot with the butter and cook until onion is translucent.
  6. Once translucent add chicken stock and scoop out the butternut squash into the pot.
  7. Let boil for flavors to meld. (5-10 mins) Then use an immersion blender to make the soup smooth. (you can also use a regular blender but be careful)
  8. Season with nutmeg salt and pepper and serve.

my favourite soup to make is chicken noodles with potatoes and rice I put a packet of chicken noodels in a bowl, and a few potatoes chopped into little squars, then add half a cup of rice and a few cloves of finely chopped garlic then let it cook for half an hour while stirring it occasionally and it tastes delicious! :D

My favorite lately is tortilla soup. The flavors are not as heavy-handed as they are in most soups where it’s like ‘’Ah, concentrated squash…’’

Rather than retype it, here’s a link to a recipe that most closely matches my process, though I roast the poblanos beforehand, use a mixture of vegetable and chicken stock, and brown the breast bones of the chicken before adding the vegetables. (Remember to take the bones out before serving, of course).
