I am having a party tonight and inviting over some friends. It is a small gathering and I want to make my own appetizers. I have plenty of mexican food recipes that I can prepare, but my salsa has never been perfected. What is a good salsa recipe?
SiSi'S ORIGINAL SALSA 8 cups tomatoes, peeled, chopped and drained 2 ½ cups chopped onion 1 ½ cups chopped green pepper 3 – 5 chopped jalapenos 6 cloves minced garlic 2 tsp cumin 2 tsp pepper 1/8 cup canning salt ¼ cup chopped fresh cilantro 1/3 cup sugar 1/3 cup vinegar 16 oz. tomato sauce 16 oz tomato paste Mix all ingredients, bring to a boil, boil 10 minutes. Pour into hot jars, process at 10 lbs of pressure for 30 minutes for pints.
Makes 6 pints i have made a couple changes to my original recipe. 1/4 cup sugar(1/3 in original recipe) 2/3 cup vinegar if BWB / 1/3 cup if pressure canned 8 oz tomato paste instead of 16
Fresh Salsa
INGREDIENTS
8 medium tomatoes, chopped
3/4 cup sliced green onions
1/3 cup finely chopped fresh cilantro or parsley
1/3 cup chopped onion
2 small jalapeno peppers, finely chopped (seeded if desired)
1 can (2-1/4 ounces) sliced ripe olives, drained
3-1/2 teaspoons fresh lime juice
1 tablespoon cider vinegar
1 tablespoon vegetable oil
1 to 2 teaspoons chili powder
1 to 2 teaspoons ground cumin
1 teaspoon garlic powder
1 teaspoon dried oregano
1/4 teaspoon salt
DIRECTIONS
Combine all ingredients in a large bowl. Cover and refrigerate overnight. Keeps up to 1 week. Yield: 8 cups.
