What can I do with a tub of ricotta cheese besides lasagna and canneloni?

I just ate something with that last night! Stuffed shells, it’ kinda like lasagna though, it’s just shell noodles stuffed with the ricotta cheese inside, you can put meat in it but it’s not necessary, then you pour sauce over it and sprinkle some mozzarella cheese on top of it. It’s super good!:)

Eat it by itself ;) Or make ricotta cheese cookies ;) 1 c. butter 3/4 c. Ricotta cheese 2 c. sugar 2 tsp. vanilla 4 c. flour 2 eggs 1 tsp. salt 1 tsp. baking soda

Blend butter and Ricotta cheese. Add sugar and eggs until creamy. Blend well. Add vanilla. Add dry ingredients slowly. Drop by teaspoons on ungreased sheet. Bake at 350 degrees 10 to 12 minutes. Cool and ice with cream cheese icing (Pillsbury). it may seem like a lot of cooking, and not simple but it really is and they are divine <3
