well I have had the same issue when I first started , a good tip is tye the rest of your hair up and just straighten the back of your hair , it means you can focus on more of what your doing and not burning yours elf. Another tip would be using a mirror , this can be difficult if you dont have a 3 sided mirror or have a person to hold it , you could always get someone else to straighten your hair for you.
For long/mid length hair you could try using a brush/comb to pull the hair away from your neck. I suppose you could try this on short hair too but if worse comes to worst ask someone else to do it. :)
just pull it away from ur neck then drop it when your done straitening it
