Like the lungs, liver, stomach ect.?
Almost every country in Europe has a meat dish that includes the internal organs. In Swabia, Bavaria, and other parts of southern Germany, there are several wursts and other meats that use the liver, spleen, and heart. You will also find pâté with these parts on the menu in France, Denmark, and Poland. Even brain is a common part of the cuisine in some European countries.
After the 'good bits' are cut off and sent to the meat factory or whatever, the other bits like organs and brains are made into cheap sausages and hot dogs. Then the hoofs are sold (people eat hoofs...) and the ears are sold for dog treats. Then the bones are sold for dogs.
Some of that ends up in hot dogs, sausages, etc. Although I love liver and kidney pie. Here in Honduras they make a soup out of cow intestines- Sopa de Mundongo, it is a traditional Sunday lunch.
I asked the question because here in my country, everything is cooked, and eaten of course. (I know...LOL) and the inner skin is made into chips....

The hooves and intestines are often used in gourmet dog treats here in the US they pack the ground up intestines into the hooves and bake it.
Well, I don't know about the lungs...but I've heard of people eating stomach, tongue, and liver.
I have actually eaten pork lungs (lights) and they are quite nice, a bit like chicken liver.
Pickled pork tongue is delicious- with some hot mustard !!

something creepy like put them in sausages.
