No matter how much I whip it with an electric mixer, it won't seem to form peaks, it just stays watery slightly gooey. How can I make it stiffen easier.
If your meringue isn't stiffening then it's usually because there was something either in the bowl or on the beaters before you started. To whip meringue, your tools need to be *very* clean - even the smallest foreign body or grease (including the smallest drop of egg yolk) will prevent the meringue from getting stiff.
