How do you create a consistent daily diet?

I'm 20 5'2 and 100 lbs. im considered underweight. genetics have given me a high metabolism. the problem is i don't eat meals. i just eat when i'm hungry and alot of the times i'm not hungry and force myself to eat because i need to get some kind of calories in me so i don't lose weight. Any suggestions on how to create a consistent diet for someone who doesn't eat meals and hardly eats meat?
