You don't. A little secret that bakeries use - you bake the cake and then use a long knife to cutt off the top of the cake that's raised.
Also, you culd flip the cake upside down so the top off the cake that's raised is on the bottom, that's what my mother always did.
You cut a thin layer of the top off. :)
