What are some health benefits of gluten-free products?

I am not allergic to gluten, but I have heard from many people how good gluten free products can be for the body. What makes gluten free products so beneficial opposed to products with gluten?

Im gluten free.(: If you do go gluten free however, you cannot have gluten unless you want to get sick, and you shouldnt have ANY gluten AT ALL for about 2 months. Its all or nothing. It takes forever for the body to heal from a small amount of gluten. Grains are not supposed to be consumed by us despite what others say. High end doctors are very much suggesting it now to patients even. You know when you eat, and your tummy feels like you have a giant weight or rock in it? That, would be gluten. I HIGHLY suggest reading “the Paleo Solution” by Robb Wolf. It would answer all of your questions (:

The Paleo diet is based on false assumptions about human evolution and diet. The Paleo diet is the latest on a long chain of diets based on the work by quack dentist Weston Price. Most people’s diets are so bad that the Paleo diet would still be quite an improvement though. Different ethnicity have been eating grain for different periods of time. Humans do adapt to the diet they customarily eat. The Japanese have been eating grains longer than Caucasians and their saliva has greater amounts of an enzyme called ptyalin that we use to predigest grain. Most people loose the ability to digest lactose after toddlerhood. A human gene mutation allows people to digest lactose all their life. Caucasians have been consuming dairy long enough that most of them have the mutation necessary not to loose the ability to digest lactose as adults; Scandinavians who were the earliest group to consume dairy have the highest percentage of people with this gene. This mutation is rare among Asians and Africans which is why most of these ethnic groups are lactose intolerant. The real problem isn’t foods like grains that mankind has been consuming for “only” thousands of years but foods like corn we have only been consuming much of for hundreds of years or highly processed foods we have been consuming for decades. If mankind were to eat McDonalds, KFC, and Pizza Hut for thousands of years we would adapt to that diet and no longer suffer obesity and heart disease from them. The genes that couldn’t deal with these foods would die out.
