why/how do you develop a reaction or allergy to something?

I had morphine for the first two caesarian births of my children but on the third developed an extreme sensitivity to morphine and have not been able to use it since over 9 years later the strongest pain medication I can have is panadeine forte and nurofen forte my boyfriend had the same problem with iodine suddenly developing a reaction to it after nearly 20 years of no problems
Does anyone know why this occurs? does the body get rid of this or do these things build up in the body like antibiotics

Basically once you have a severe allergy it stays that way. Allergies is usually a reaction to proteins in a certain thing. And most things (i.e. foods, people, animals, substances) are made up of a combination of proteing. Once your body responds to that protein and become sensitive to it you are stuck with the allergy.
