Make her a coupon book. Make some coupons, like good for one back massage, good for a dinner and movie, stuff like that. makes a fantastic gift and can be used for a very long time. :)

maybe, depending on how much you want to spend, maybe take her to a shop you know she likes and pet her choose anything she wants?

or maybe a classic nice evening out of her choice
