What makes eggs become more/less healthy depending on the way you cook them?

Like, a poached egg is a lot better for you than a fried egg. Providing you use very little oil in the pan, what makes the poached egg so much healthier?

If you cook them in oil, or in water. Just using the white will make them healthier, because the yolk contains saturated fat. What you add to it, eg, smothering them in mayonaise is definately going to lower the healthiness! Thats pretty much all I can think of!

Oh, and as for the poached thing, I dont think there is a huge difference, as long as you arnt using huge amounts of oil, and as long as the oil is cholesterol free.

Thanks, usually don’t cook with oil at all but obviously have to when frying eggs or they will stick. They just didn’t look or taste healthy at all, whereas poached eggs seem healthy. My mum mentioned that fried eggs are a lot more fattening/unhealthier than poached or scrambled :S

I use PAM instead of oil or butter.. you can also take the yolk out and just cook the egg whites and you get all the protein you need without the bad stuff ;)

While the yolk does contain most of the saturated fat and cholesterol in eggs it also contains most of the nutrients. Most of an egg’s Calcium, Iron, Zinc, Thiamin, Folic acid, and vitamins A, B6, B12, D, E, and K are in the yolk. Eggs have not been shown to increase serum cholesterol; it is possible that the lecithin in eggs cancel out the cholesterol. If you are going to eat eggs you might as well eat the whole egg (not the shell, but you knew that!).

Eggs that contain the yolk contain cholesterol and an extra 3g of protein. This can be helpful if you need the cholesterol, as it also boosts testosterone levels for muscle growth.

If you cook only the egg whites, you only gain 4g of protein but without any cholesterol. I usually make an omelet out of egg whites or scramble them in PAM.

If you want to preserve some flavor, try using one or two whole eggs and then 3 or 4 whites. I find that scrambling them or making an omelet is the healthier way instead of boiling. Boiling an egg in water makes it easier to separate the yolk from the white because you can just peel the whites off.
