Besides them giving you gas, there arent any. That is as long as you wash them off very thoroughly with a vegetable scrubber before eating.

Agreed with mandyloo, fresh is best….there’s one exception to the rule, though - processed tomatoes (in a can) are actually higher in antioxidants than fresh tomatoes.

For the most part uncooked vegetables are very healthy.

Some vegetables (potatoes and some beans) do have toxins that cooking eliminates and some vegetables are so hard to digest raw that cooking actually makes them healthier (carrots for example). Other than these exceptions vegetables are healthiest raw and the more they are cooked the more nutrients are lost.
