Same as you would make most any other fruit pie filling. Mix sugar, some lemon juice, and whatever spices you please (cinnamon/nutmeg/allspice/cloves). Personally, I like to reduce the filling a little bit in a saute pan first with some butter and get a little caramelization going before adding the filling to the crust, some don't. When ready to fill, toss it with some flour and pour into the crust. Done and done, and it took, what, 15 minutes and two dishes to wash.
