One cookie recipe I make year after year, are these Five-Spice Gingersnaps. My own recipe has been varied slightly and perfected over the years from its original source.

Five-Spice Gingersnaps

Ingredients: 2 cups AP flour 1¾ tsp Chinese 5-spice 1½ tsp baking soda ¼ tsp salt 3 tbsp ginger 1 cup sugar ¼ cup corn syrup ¾ c unsalted butter; melted 1 egg Icing: 450 gr icing sugar 4 tsp powdered egg whites (not reconstituted) such as “Just Whites” 1/3 cup water 1 tbsp lemon juice 1 tsp vanilla extract

Method:

Whisk together flour, 5-spice, baking soda and salt.
Separately, mix together ginger with ¼ c sugar.
In mixing bowl, beat together syrup, butter, egg and ¾ c sugar until thick and creamy.
Add flour mixture and mix until dough forms.
Form into a ball and chill about 8 hours.
Roll out and cut.
Bake 10-12 minutes at 325F.
Decorative icing: Beat all ingredients together until just combined.
Increase speed to high and continue to beat until icing holds stiff peaks.
