A neuron is one nerve cell. The optical nerve consists of many neurons.

Sensory neurons are all neurons that belong to nerves that provide your brain with sensory input. Optical neurons are one sub-category of those. Other subcategories are your other senses, hearing, smell, taste and touch.

As the function of the neurons in your optical nerve is to provide your brain with optical sensory input, the neurons in your optical nerve are indeed both sensory neurons and optical neurons.
