Well, first of all, you need to figure out if the pink is a result of under-cooking - it's actually quite common for thoroughly cooked chicken to be slightly pink. Chicken is fully cooked and safe to eat when it reaches an internal temperature of 165 degrees F ... that means, you can still eat it if it's pink, so long as the harmful bacteria is dead.
well.. any meat is really not good for you if it's still pink, the pink means it's not thoroughly cooked.. when chicken is still pink it has bacteria in it that can make you sick.
I wouldn't eat pink meat. It's not good. It's very bad. Pink just means the chicken wasn't cooked properly.
After cooking? The general rule is 2 hours ... after that, you need to get it in the refrigerator.
