Spanish recipes?? :)

My fiance and I plan on makeing a spanish meal.. Not tacos. Or wraps. Just sumthing that will taste like sumthing from mexico.. Or spain.. Them types of foods... Lol.. I was wondering anybody here know a recipe that be great for us to try and make...

Still sorta like a wrap, but good nonetheless.

Enchiladas!

You need:
Boneless skinless chicken breast or ground beef
Soft taco shells
Red enchilada sauce(It comes in a can in the taco aisle)
Shredded cheddar cheese

Cook and shred chicken or cook and drain beef
Spread soft taco shells out and fill with meat and a little cheese
Spread 1/3 of the enchilada sauce over the bottom of a baking dish
Roll shells up and place seam side down in baking dish
Cover shells with remaining sauce and cheese
Cover with foil and bake for 30 minutes at 325F

Serve with some Spanish rice. It's easy, fast and really good.
