Probably the heat cooks out the moisture, and the roots get so hot they don't function.
Would it be possible to put in a raised bed, where the roots could grow deeper to avoid the heat? If it gets too hot, the plants will probably fail anyway. Ask at nearby garden centers for the best variety for your area and how you plan on growing them.
You may have to go for two crops, an early crop and a late maturing crop that won't fruit until after mid-summer.
Good Luck!!
