Frying chicken breasts

Asked by richard1 about 1 year ago, 4 answers.

How do you get the crust on the chicken to stick to the meat. A lot of times my crust falls off when I'm pan frying my chicken breasts.

I'm not entirely sure what you mean?
However if youre not using eggs to get the bread crumbs to stick, that might be the problem... maybe try using fewer bread crumbs?

what crust?
if you mean the crumbs then do the following:

mix 1 egg and a small amount of milk in a bowl.
dip the raw chicken in the mix, making sure you covered the entire thing
place into a bowl of crumbs and cover the chicken with the crumbs around it
press firmly on the chicken to stick the crumbs to it
repeat if not entirely covered

this should be good enough. hope it works, it does for me.

Before you do anything with the chicken...

-- wash it.

- toss the chicken breast into flour and gently pat it so the excess flour comes off, then dip it in the egg and the bread crumbs. The flour will help ensure everything adheres.

instead of using an egg you can also use sour cream (sounds odd I know) but it makes the chicken really moist and the breading sticks to it a lot better.
