Aside from consulting jobs, have you tried doing transcription (medical, legal, etc.)? I've done medical transcription work briefly while I was in a nursing program. Generally, large corp's like experience or certification but some are willing to train you as part of their program if you agree to work for an extended period of time. If you're at all interested in that, many local hospitals allow you to work at home doing transcription services so you could try contacting them.
