your cookies will burn if you are using a dark or non stick cookie sheet, try using one that is silver and shiny.
here is my NEVER FAIL cookie recipe.
makes 4 dozen cookies
1 1/2 cups sifted all purpose flour
1 teaspoon baking soda
1 1/2 teaspoons ground cinnamon
1 cup softened butter (2 sticks) {use real butter for best results}
3/4 cup firmly packed light brown sugar
3/4 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
1 1/2 cups quaker oats
1/2 cup semi sweet chocolate chips (use 1 cup of these if you do not want to use butterscotch chips )
1/2 cup butterscotch chips
step 1- mix together flour, baking soda, and cinnamon
step 2- beat together softened butter , brown sugar, and granulated sugar at medium speed until light and fluffy- THEN BEAT IN THE EGG AND THE VANILLA.
step 3- at low speed , beat flour mixture into the sugar mixture until blended, FOLD IN THE OATS AND CHOCOLATE CHIPS, cover the bowl with plastic wrap and chill in refridgerator for 1 hour.
step 4- preheat oven to 350*, grease 2 baking sheets.
step 5- shape dough into 1 inch balls, place the balls of dough on the cookie sheet at least 2 inches apart, flatten each dough ball SLIGHTLY.
step 6- bake cookies until they are lightly browned around the edges, usually around 10 to 12 minutes. transfer cookie sheets to wire racks to cool slightly- then remove cookies from cookie sheets and place the cookies on the racks until cooled completely.
good luck cooling them on that last step- I usually can't wait to eat one and get to them while they are still warm- with a tall glass of cold milk, not much better tahn that.
