I would say go to a restraunt where they make chrispy chicken and ask them. They would know more then anyone on here. Like try out KFC or something.

If you mean how do you get crispy fried chicken, the key is getting the oil to the proper temperature. If your oil is below 360 degrees, the oil will not fry the outside of the chicken. Instead, it will soak into the chicken skin and meat, making your chicken greasy and soggy and unpleasant. (That temperature is approximate. Some cooks will say it has to be higher, some lower, but 360 is a decent median.) The internal temp of your chicken should be 160 when fully cooked.

The only way to be sure about the temperature of your oil is to use an instant-read thermometer and test it. They're about $3-$5 in a kitchen-supply store, and it will quickly become the most-used item in your kitchen.
