Apple sauce is a good substitute, but it can't be used as a substitution for all baked goods. You'll need to reduce the sugar in the recipe if the apple sauce is sweetened.

Pureed prunes work better with chocolate

Mashed bananas work to reduce the fat by about 1/3

Some baked goods simply can't be compromised with substitution, unfortunately.
