is Sodium metabisulfite the same as sodium nitrate?

Not exactly, but they have some common purposes.

They are both used as preserving agents, but while metabisulfate is also used as a disinfectant, nitrate is used in fertilizer.

No... one has a nitrate and one has a sulphite...
