What are your favorite seasonal vegetables for late summer?

Benny Asked by zstaciez 11 months ago, 3 answers.

What are your favorite seasonal vegetables for late summer? I am trying to 'cook in season', but want to mix up what we've been eating lately. Can you tell me why these are your favorites?

my mom makes Zucchini and Summer Squash on the grill, with butter and some seasoning..
She cuts it up and puts it in tin foil, and wraps it up and outs it on the grill. Its my favorite.
She also does the same thing with potatoe slices. If you do it right, theyll come out crunchy, and they taste amazing.

Corn on the cob is good, too.

If you like garlic and zucchini I think you might try this. Get some olive oil and saute some finely chopped garlic in there then throw in a couple of diced zucchini and sliced up tomato and finely slice up onions. Simmer all together for a few minutes until the zucchini is mushy and pile up the cheddar cheese on top. Sometimes I add about 1/4 cup of canned corn. I love this with flour tortillas! YUM
