There are tons of videos and books on the subject of hunting dogs, but some dogs will always make better dogs then others. MY black lab was terrified of jumping INTO the water, he'd gladly wade in, but he wouldn't jump, my husbands golden lab is terrified of gunshots and hides under the bed during hunting season. Most dogs have to be trained as puppies, but you can in fact teach an old dog new tricks. Try going to an outdoors store such as Gander Mountain, they would have a ton of dog training advice and ideas. Also look for a local hunting club and talk to some members
Answer this Question: "making a hunting dog"

Making a hunting dog
I have a dog that has never been hunting before and I was wondering how to break him in to gun fire with taking off. He is a well behaved dog and doesn't go far from my side on walks, but he does chase animals in the backyard, and has killed diffrent animals on his own such as birds, rabbits, opposums. So Iam not sure how to break him in as a bird dog.
