There are two distinct kinds of high altitude sickeness - pulmonary and cerebral. The sense of balance is usually the first go; it appears together with a general feeling of disorientation and unclear speech. Obviously, when the sufferer is in the final stage and loses consciousness, there is no control of any of the senses.
Otherwise, though, I would imagine that the sense of hearing would be among the last to disappear,if there were any clear order..
