I recommend using Sutter Home, I think it is their chardany. You should be able to find it in your area. Ichi is right it does depend on what you are using, but pork and chicken recipes can call for it when baked or poached. If I was using it for a dessert I would definitely go to a wine tasting before I made my choice, sometimes those really dry really sweet wines are too much.
