Depends on lots of things.
First off, where do you live? How long is your growing season? If you live somewhere with a short growing season you may have to start some of your crops indoors in pots than after the danger of frost is gone you can transplant them outdoors.
Your best bet is to ask other gardeners what varieties they have had good luck with in your particular area and when they planted. If you don't know anyone you might go to a farm or seed store and ask them what they recommend.
