poker face is a term used when you are playing poker, if you don't want to give away a good hand of cards you have to calmly look like nothing has happened and show no emotion.

In the song she's just explaining she is bisexual and likes girls but has a poker face when it comes to guys because she doesn't want to give away that she has feelings for women as well.
