What are some good gyro recipes?

I want to make gyros for a family picnic coming up next month. What are some good gyro recipes?

My dad is of Syrian descent, and gyros were always really popular at my house growing up. Traditionally, it's made with lamb, which can be expensive and a lot of people are judgmental about eating! (Although in England, it's basically a staple).
