For the last 2 years I've been taking the easy way out. Depending on how may people you have, you may find you can get a large breast of turkey and instead of a huge roasting pan, simply bag it and cook it on a heavy rectangler pan. Even if you have to have a full turkey, you can still cook it in a bag. I was surprised at how juicy and tender a turkey is when it is cooked in an oven bag! Takes less time to cook and easy to clean up too.

Turkey marinades, or should i brine the bird again?
Turkey marinades, or should I brine the bird again? Last year, my wife I had a guest over we got ambitious after watching the food network show on how to prepare the thanksgiving turkey. So instead of using turkey marinades, we brined the...
bird.
Directions were pretty simple - the night before, take the turkey out of the freezer and put it into a large container filled with salt water. Also add spices other seasonings, which is supposed to impart a great flavor. The turkey did end up tender, but it was a bit more work than just using marinade baking as usual. What do you think? How are you going to prepare your thanksgiving turkey?
