Ever since this incident, I am having trouble talking to my mum about anything. How can I explain to my mum that I know what I am doing. How can I get over this embarassment of her walking in on my girlfriend and I. We are both 17 years old and very mature for our age.

Dude, the problem is that you are living at with your mum, and while you live with parents they consider you a child. Lucky that all she did was scream and walk away. This will all fade and you will be able to talk to your mum about this and even more embarrassing events as you grow older and even laugh at it I'm sure, once you move out to go to college or get a job and your own apartment. If you are as mature as you say, you will be moving out soon when youre 18, to a place where no one is going to walk in and scream.))
