why does salt makes champagne fizz?

It's because of the carbon in the champagne - the carbon creates bubbles around the salt (due to the coarse texture of the salt grain) and causes it to fizz.

..and, if you DON'T want the fizz in champagne (I myself can't swallow fizzy drinks) add a wee bit of sugar and stir... Mind you, that was NO FUN at the wedding reception... but it did come in handy when I was in Cuba with my infant daughter and she got a tummy upset and had to drink bottled soda water - de-fizzing it was the answer..
