Oil or butter

Butter, you need something that will thicken as it stands and cools, oil doesn't do that.

Assuming you're talking about baked goods, an egg wash will make a shinier, crunchier glaze than either oil or butter. Apply directly before baking, and score the top for a dramatic contrast.

If you're talking about meat, either oil or butter will work just as well to conduct heat to the surface of the meat and cause some browning. At that point, it's just a matter of flavor preference.
