Generally, when you get a scanner there is a driver and some scanning software included in the package. The scanner (if USB) should remain unplugged until you install the software, which would at some stage ask you to ensure that the scanner is connected, or request that you connect the scanner. At this stage, when you connect the scanner the installation would continue. After the installation you should be able to scan whatever you want.
If you want to scan a document to be able to edit it afterwards, you'll need OCR software which some manufacturers include and some don't. Adobe makes some good OCR packages which you could consider.
