Can you eat lemon skins?

Nadzy you should research before knocking other peoples questions.

Lemon skin / peel is used a lot in bakery. ---the peel of lemon
Also in Asian food they use peel large parts of rind and add it to cooking. Its perfectly fine to eat, its the white membrane underneath that gives the bitter taste.

yes, I love baking and I use the rind a lot like evecat11 said, it is the white part that is bitter
