Use a can of diet soda instead of the water/oil/eggs the mix calls for. If you want, add an egg white to make the cake a little denser, or a tsp of vanilla extract for flavor. For choc cakes, you can use diet cola... but for lighter ones like vanilla or lemon, use diet lemon-lime soda instead.
