In my resturant we use an 80/20 hamburger, We have them prepattied. Season with prep and pepper. Then put them on a flat top grill, cook on one side flip over flatten once, continue cooking till done. Dont flip to much as it drys out the meat.. Cook to meduim/well to well. Over cooking dries out also.
