look for one whois moving and active. also, ask and see if you can hold a couple of them. make sure they dont bite you, or pee on you either.
I don't think anyone really knows just take the one that looks the heathiest to you and stuff! that is what I would do. (I guess)
narrow it down to a couple of hamsters that you think fit your standards, then ask to hold those couple and play with them for a minute or so, see which ones poop and pee and BITE like maniacs (yuck) and which ones can somewhat control themselves. just choose the one you like best out of those :]

If you get a hamster from a pet store, then it should not have greasy fur, it should have bright, clear eyes, have plenty of energy, be inquisitive, yet still cautious, it should have clean hindquarters (free of any feces or urine) and shouldn' t be too skinny.
get a EUROPEAN BLACK BEAR HAMSTER. they are SOOO nice and good with kids and easy to handle and cute and fuzzy and everything you could ever want.
